Granular Exchange backup using off-host over SAN ?

I would like to achieve following :-

1. Create Snapshot on a Exchange 2010 servers.

2. Mount this snapshot on media server across SAN (not LAN), for a off-host backup.

3. Backup

Please help me understand what are the :-

1. comppnents - software, hardware needed?

2.What ais data / information (trigger) flow among the various components ?

Additional question -

Will Exchange granular recovery (Brick-level using Symantec verbiage) work in the above setup ?
